Apple Plumcake with Hazelnuts

So “Winter is coming”, yes I’m addicted to Game of Thrones, by now only to the TV series but I’m looking forward to read all of them!  I’m not joking, winter is here by now, so I take advange of using the oven and bake more often.

It’s a quite simple recipe, you will have to spend most of the time waiting more than the time you used to do it! This plumcake is made of hazelnuts on the inner and with sliced apple at the top. The concistence is very fluffy thanks to apples. This plumcake is perfect as a snack and with a hot cup of tea. Let’s see how to do it!

APPLE PLUMCAKE WITH HAZELNUTS

  • 3 eggs
  • 250 g sugar
  • 1 glass milk
  • 100 butter
  • 300 g all purpose flour
  • 16 g baking powder
  • 10 ml lemon juice
  • 50 hazelnuts
  • 2 apples

In a large bowl, whisk the eggs with the sugar, until you they’re fluffy and light. Add the milk and the flour. I used rice flour because I wanted to try something different, but if you use all purpose flour is okay, it won’t change so much the flavour at the end of baking.

Now add the melted butter to the mixture and the baking powder and mix well. At least, add the lemon juice. In a mixer or with a knife, slice the hazelnuts into little pieces and add them to the mixture.  Peel off the skin of the apples and cut them into thin slices.

Preheat the oven at  200 ° C. Now in a plumcake tin put some parchment paper on the bottom and pour the mixture into the tin.  Now you can arrange the sliced apples on the top. Gently insert them into the plumcake until you have most of the slice into the plumcake and a bit of slice out.  (Have a look at the photo and it would be better than explained!).

Bake the plumcake for about 40-45 minutes and then serve it!
