Since I was I child, I ate plates and plates of Pasta and Bean, that in Italian is “Psta e Fagioli”. When my mom was pregnant of me she used to eat a lot of it, maybe it’s for this reason or not, but it’s one of my favourite even by now.
My granny, that I usually see only twice or three times a year, always cook it for me, even if it’s mid summer! You can think is a poor dish, and maybe it is, but nothing is better than it on a cloudy Sunday.
This is our family recipe, it’s quite simple and it doesn’t need to much attention. Let’s see how to do it!
PASTA AND BEANS
- 400g beans
- 500ml water
- extra virgin olive oil
- 30 g smoked pancetta
- half onion
- pinch of salt
- 1 stock cube
- 100g tomato sauce
- 200g pasta
First of all, mince the half onion and chop into cubes the smoked pancetta. In a large pot, pour some extra virgin olive oil and add the smoked pancetta and the minced onion and let it brown (approximately five minutes).
When they are brown enough, add the tomato sauce and the stock cube, let it all cook for 10 minutes. Then add the beans and the water (maybe you wouldn’t need all water or you would need more, it depends).
Add a pinch of salt and turn when it needs, until the beans are nearly cooked. Then add the pasta (200g are approximative for three people, you can put more or less, it depends on how many people are going to eat it) and let it cook. I used quadretti (little pasta square) that I usually use with the broth.
Now your Pasta and Beans is ready! Simple and with few ingredients, serve hot and go for seconds!
